I am having a REAL hard time fathoming that the sun has been setting at 5:00pm and it’s pitch dark by 6:00pm. I am finding that my most productive time of the day is in the morning before I go to work.
However, one thing that I do love about this time of year is eating soup. I have decided that one way to overcome the early darkness, is through making soups to eat during the early dark days and the cold weather.
I try very hard to follow recipes and make tasty food, and unfortunately, I usually tend to mess it up…not sure how or why. Nathan says it’s because I try too hard to make complicated things. However, soup is not that hard. This past week I made a great Coconut Curry Lentil Soup (it was almost vegan, but I only had chicken stock on hand). I got the recipe from The Modern Proper Blog which is full of great recipes that I cannot stop looking through. This recipe was super easy to follow, everything went into one pot and then it simmered. It really took no advanced cooking skills or recipe following. One downside was that I think the curry powder I bought from the Co-op grocery store was not flavourful enough and we may have put slightly too much coconut milk in which made the soup S(O)UPER rich (hehe, everyone loves a good soup pun). This soup was very filling, full of veggies, and protein! I would recommend making this.
My goal is to try and make a new soup every week – so keep your eyes open for a weekly soup review/process!
